Inspired by Hans Peter Schmidt at the Mythopia project in Switzerland. A small barrel was hand filled with whole bunch fruit in the vineyard, sealed up and stored on-site until the following October. One year of whole bunch maceration. The grapes were then pressed very gently in a traditional basket pressed and transferred to a glass demijohn. After resting over the winter, malolactic fermentation occurred naturally the following Spring. Bottled under gravity with no additions in August 2025.
