Growing grapes and making wine in Leicestershire

Matt makes English wines based on Pinot Noir, Pinot Gris and Bacchus that he grows in the Leicestershire Wolds.
The emphasis is on careful grape handling, extended infusion macerations, and trying to do as little as possible in guiding the grapes into a delicious bottle of wine.
Focused on the grapes from his small vineyard plot and making them into wines that allow that sense of place to show through, but in a very hands off way. Minimal handling and interventions in the form of sulphur, fining and filtration. None of this done in a dogmatic way, but with the aim of the tastiest wine possible ending up in the glass: a glass of wine that is full of pleasure and delight.
